Collard greens are a wonderfully nutritious addition to any meal. Add them to warming stews, curries or use them as a side dish. It can be tricky to learn to love greens, but this recipe really packs in the flavor and it’s far from the lifeless leaves your imagination may conjure up. They add a delightful freshness to a meal and perfectly balance out the richer, heartier components on your plate.
These collards are the perfect thing to make you feel like you’re eating healthy and make up for any recent indulgences on all the snazzy new vegan products out there. This is far quicker than your average collard recipe so you’ll be chomping on this nourishing, flavorsome dish in next to no time!
Ingredients
10 oz collard greens (or 280 g)
2 minced garlic cloves
1 cup chopped onion (or 150 g)
1 tsp apple cider vinegar
1 tsp paprika
Frying oil
Salt and pepper to taste
Instructions
- Remove the thick central ribs of the collards, stack them up and roll into a sausage-like shape. Slice thinly to form strands then chop into even smaller pieces.
- Heat oil in a large frying pan over medium heat, then add the collards and cook for up to 6 minutes, stirring frequently. The cooking time will vary depending on how well done you like them.
- A few minutes before the collards are done, add the onion to the pan and sauté until softened. Then add the garlic and sauté for 1 minute.
- While on the heat, add apple cider vinegar, paprika, salt, and pepper to the pan, stir, then serve.
