Vegan Stuffed Peppers

Stuffed bell peppers are a great, vibrant dish for impressing your dinner guests: they always get compliments! This is a simple recipe for meatless stuffed peppers.


  • 6 bell peppers
  • 2 onions
  • 3 tomatoes
  • 2 tablespoons tomato paste
  • 3/4 cup of rice
  • Oil for frying
  • ½ teaspoon of salt
  • 1 teaspoon of paprika
  • ¼ teaspoon of black pepper

For the sauce:

  • 5 cups of water
  • 2 tablespoons “chicken flavored” broth/stock powder (with no animal ingredients!)
  • 3 tablespoons tomato paste
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika


  1. Chop the onions and saute until browned.
  2. Add the rice, stir, and after about three minutes remove from the heat.
  3. Blend the tomatoes in a food processor, and add the tomato paste, salt, pepper and paprika, and stir.
  4. Add this mixture to the rice.
  5. For the tomato sauce, mix together: the water, stock powder, tomato paste, cumin and paprika.
  6. Remove the tops of the bell peppers.
  7. With a spoon, fill each pepper with the rice and tomato mixture, up to about two-thirds full.
  8. Place the peppers in a saucepan or deep frying pan, and pour the sauce over them, so that at least most of the peppers are covered.
  9. Cover and allow to simmer for an hour.
  10. Serve hot or cold.
