It’s a popular vegan meat replacement that will wow your taste buds with its impressive similarity to mince. Feel free to mix up the spices in the recipe depending on what you have in the cupboard.
Ingredients
1 cup textured vegetable protein (TVP), small flakes (or 100 g)
2 cups vegetable stock (or 480 g)
2 tbsp tomato paste
2 tbsp soy sauce
1 tbsp nutritional yeast
1 tsp garlic powder
1 tsp cumin
1 tsp smoked paprika
¼ tsp chili flakes
1 tbsp olive oil
Salt and pepper to taste
Instructions
- Soak the TVP in 2 cups of vegetable stock for 5 minutes, then drain.
- Add all the ingredients to a food processor and pulse until you get a crumbly mixture, not a paste. Spread evenly onto a baking tray lined with parchment paper.
- Bake at 175°C (or 350°F) for 15 minutes, then take out the oven and check. Bake until you get the desired mince texture.
