Who’s in for an easy, gorgeous sushi bowl with teriyaki tofu?? Save this idea for your next nourishing, quick, colorful meal!

What makes a sushi bowl so great? This sushi bowl is a really versatile meal, giving you the option to use whatever veggies you have on hand or feel like eating, and it’s beautiful in its simplicity.

It is worth adding the seaweed if you have some, as it’s packed with nutrients, and it really brings the sushi flavor!


Ingredients

Scale

Sushi rice:

  • Sushi or other short-grain rice
  • Rice vinegar (optional)

Toppings:

  • Seaweed (we used wakame, but nori or any other kind is fine)
  • Soy beans (edamame)
  • Tomato
  • Carrot
  • Avocado
  • Mango
  • Radish
  • Any other sliced veggies you like!
  • Sesame seeds, to garnish

Teriyaki Tofu:

  • 300g  (or 10 oz.)  tofu
  • Juice of ½ orange
  • 2 tbsp soy sauce
  • 3 tsp brown sugar (or 2 tsp agave syrup)
  • 1 tsp garlic powder
  • ½ tsp ginger (optional)

Instructions

  1. Cook your rice according to package instructions, and stir in a little rice vinegar when it’s done if you have some.
  2. Cut the tofu and fry in a little oil in a non-stick pan.
  3. When it’s golden on all sides, add your marinade and stir until the marinade is completely absorbed and the pan is dry.
  4. Take spoonfuls of your rice, tofu, seaweed, veggies and other toppings and place around a nice bowl or wide plate to build up your sushi bowl however you like.
  5. Enjoy!

Notes

This is a refreshing and light meal with a lot of nutritious raw veggies. You can also add roasted veggies to give it a heartier feel.
