Description
A surprisingly simple recipe for a deliciously warm red lentil soup that is going to be loved by the whole family. Lentil soup makes for a quick, affordable and satisfying meal. Being a small legume, lentils are easier to digest than beans, so they are the perfect start for incorporating more legumes into your diet. They are an excellent source of fiber, iron, and protein, making this dish a healthy and comforting meal.
Don’t have any red lentils? Don’t worry, you can always use yellow lentils for an equally delicious soup. Ingredients
- 1 cup red lentils (or 200 g)
- 5 cups water (or 1.2 l)
- A little oil for frying
- 1 large onion
- 1 large tomato
- 1 tsp salt
- 1 tsp paprika
- 1 tsp curry powder
- ½ tsp turmeric
- ¼ tsp black pepper
- 3 garlic cloves, finely chopped
- 1 lemon, juiced
- ½ cup chopped coriander leaves (or 25 g)
Instructions
- Bring the lentils to a boil in a pot with 5 cups of water. Reduce the heat and cook for another 15 minutes.
- Meanwhile, chop the onion and tomato. Fry in a skillet or frying pan with the spices for about 5 minutes.
- Add the tomato mixture to the lentils, then add the coriander, garlic, and lemon juice, stir, and cook for 5 more minutes.
Notes
- The coriander can be substituted with parsley.
