Creamy Dairy-Free Thai Curry Coconut Soup

Ingredients
- 2 large heads of broccoli
- 1 cup peas
- 1 onion
- 1 large potato
- 1⁄2 cup coconut cream
- 3 cloves garlic
- Handful of fresh parsley, chopped
- Handful of fresh dill, chopped
- 1 tbsp olive oil
- 1-2 tsp Thai green curry paste, to taste
- Curry powder, salt and pepper, to taste
- 1.5 liters of water (or 50 fl. oz.)
Instructions
- Finely chop the potato, broccoli, onion, and garlic.
- Combine all the ingredients in a saucepan over medium heat.
- After about 20 minutes, when the vegetables are tender, remove from the heat.
- For a smooth soup, blend with a hand blender until smooth.
- Garnish with fresh herbs, croutons, and/or sesame seeds, and enjoy hot.
