Creamy Dairy-Free Thai Curry Coconut Soup

Creamy, dairy-free Thai curry coconut soup is the velvety smooth, non-dairy cream soup of your dreams! Whenever the weather starts to turn cooler, we reach for a bowl of this fragrant, warming, and comforting vegan soup with potatoes, peas, broccoli, Thai green curry paste, and coconut cream.

Ingredients

  • 2 large heads of broccoli
  • 1 cup peas
  • 1 onion
  • 1 large potato
  • 1⁄2 cup coconut cream
  • 3 cloves garlic
  • Handful of fresh parsley, chopped
  • Handful of fresh dill, chopped
  • 1 tbsp olive oil
  • 1-2 tsp Thai green curry paste, to taste
  • Curry powder, salt and pepper, to taste
  • 1.5 liters of water (or 50 fl. oz.)

Instructions

  1. Finely chop the potato, broccoli, onion, and garlic.
  2. Combine all the ingredients in a saucepan over medium heat.
  3. After about 20 minutes, when the vegetables are tender, remove from the heat.
  4. For a smooth soup, blend with a hand blender until smooth.
  5. Garnish with fresh herbs, croutons, and/or sesame seeds, and enjoy hot.
