Lemon Coconut Soda
Ingredients
- 1 cup coconut cream
- 1 cup cold water, or sparkling water
- ⅓ cup fresh lemon juice
- 3 tbsp coconut sugar, agave, or sweetener to taste
- 1 cup ice cubes
- Zest of ½ lemon (optional, for added flavor)
- Lemon slices and mint leaves for garnish (optional)
Instructions
- In a blender, add the coconut milk, water, lemon juice, sweetener, and ice.
- Blend for 1 minute or until well combined and slightly frothy.
- Taste and adjust the sweetness if you like.
- Serve in glasses with more ice and garnish with lemon wedges and mint, if desired. Enjoy!
- For a lighter version, use coconut milk from a carton instead of the thicker canned coconut milk.
- Turn this into a frappé by adding more ice and blending until you get a slushy consistency.
- Try adding a splash of vanilla flavoring for an extra special touch.
