Lemon Coconut Soda

This is an easy-to-make, refreshing lemon coconut soda with just a few ingredients that still makes a special drink. Perfect for sharing – or not! Still or sparkling lemon coconut soda that takes just 10 minutes to put together. And it’s not just delicious – the lemon also provides vitamin C and antioxidants.

Ingredients

  • 1 cup coconut cream
  • 1 cup cold water, or sparkling water
  • ⅓ cup fresh lemon juice
  • 3 tbsp coconut sugar, agave, or sweetener to taste
  • 1 cup ice cubes
  • Zest of ½ lemon (optional, for added flavor)
  • Lemon slices and mint leaves for garnish (optional)

Instructions

  1. In a blender, add the coconut milk, water, lemon juice, sweetener, and ice.
  2. Blend for 1 minute or until well combined and slightly frothy.
  3. Taste and adjust the sweetness if you like.
  4. Serve in glasses with more ice and garnish with lemon wedges and mint, if desired. Enjoy!
  • For a lighter version, use coconut milk from a carton instead of the thicker canned coconut milk.
  • Turn this into a frappé by adding more ice and blending until you get a slushy consistency.
  • Try adding a splash of vanilla flavoring for an extra special touch.
