Vegan Energy Balls with Dates and Nuts

Ingredients
- 2 ¾ cups pitted dates (or 500 g)
- 1 cup walnuts (or 117 g)
- 3 tbsp peanut butter, (1-ingredient peanut butter is the best!)
- 3 tbsp tahini (optional, or you can double the quantity of peanut butter)
- 1 cup shredded coconut (or 70 g)
Instructions
- In a food processor, pulse the dates, walnuts, tahini, and peanut butter until well combined.
- Form about 25 balls from the mixture, making sure to press firmly into shape.
- Add some shredded coconut onto a plate, and roll each ball around until coated.
- Chill in the refrigerator and serve cold.
- You can use any kind of dates, but Medjool dates are the best!
- The coconut can be substituted with sesame seeds, fine-ground oats, ground flax seeds, or even cocoa.
- For an even quicker version with no need for a food processor: mix 2 cups of oat flour with 6 tablespoons of peanut butter and 6 tablespoons of date syrup or molasses. Form into about 12 balls, sprinkle fine-ground oats onto a plate, roll the energy balls until coated, and chill.
- Medjool dates stuffed with nuts are a simple and delicious snack that your guests will love – you can even coat them in dark chocolate! It’s easiest to pit fresh dates after cooling them slightly.
- These are really adaptable; try adding grated citrus zest, finely chopped crystallized ginger, small chocolate chips, finely chopped nuts, or other favorite flavors to the mix, just before you form them into balls.
