Blended Chia Pudding

Chia seeds have been a staple in South America since the time of the Aztec Empire. They are an important and naturally plant-based source of omega-3 — about two teaspoons of chia seeds provide all the omega-3 you need in a day!

Chia pudding is an easy, delicious, and convenient way to eat chia seeds as a nourishing snack, dessert, or breakfast. This recipe is simple, satisfying, and full of protein and omega-3. We serve our chia pudding with mango and coconut, or strawberry coulis for a particularly delicious and refreshing pudding.

Not a fan of the texture of chia pudding? We recommend blending or grinding the chia seeds first to make a really smooth chia pudding. This will also reduce the amount of time the chia pudding needs to rest before serving.

Ingredients

For the chia pudding:

  • ¼ cup chia seeds
  • 1 cup plant-based milk
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract (optional)

For the strawberry coulis:

  • ½ cup strawberries or other berries
  • 1 tablespoon maple syrup
  • 1 tablespoon lemon juice
  • 1 tablespoon cornflour
  • 1 tablespoon water

Instructions

  1. If blending/grinding your chia seeds for a smoother result, grind chia seeds in a coffee grinder until you have a powder. You can also blend once everything is mixed together, or skip this step entirely.
  2. Mix the pudding ingredients well in a jar or bowl. Leave for 5 minutes, and mix again.
  3. Place in the fridge overnight, or for 2 hours at least.

To make the strawberry coulis:

  1. Blend the strawberries with a hand blender/a fork/press through a strainer. Then transfer to a small saucepan over medium heat.
  2. Add the maple syrup and lemon juice and mix. Taste and adjust the sweetness until you love it.
  3. Meanwhile, in a small bowl, mix the cornflour with the water until there are no lumps.
  4. When your berry mixture is bubbling, add the cornflour mixture and mix well with a whisk or fork for 2 minutes, until the mixture thickens. Set aside to cool and store in the refrigerator.
  5. In the morning, pour your coulis over the chia pudding and add any other toppings you like: fresh fruit, nuts, mango, coconut, seeds.
  6. Enjoy!
