Description

Green Gnocchi! Is there a quicker meal than this that’s still home-cooked, easy, and completely plant-based? We’d love to hear about it if there is!

Nourishing lamb’s lettuce combines with almonds and cashews to create a creamy, oil-free, vegan, beautiful green sauce. We served it with gnocchi and had dinner on the table in minutes, but you could also serve it drizzled over pasta, potatoes, veggies, or whatever you like.

This is also delicious using sunflower seeds, walnuts, or pecans instead of almonds and cashews. Mix and match and let us know what you like best!


Ingredients

  • 800g gnocchi
  • 70g lamb’s lettuce, spinach, kale, or any other greens you like
  • 30g almonds
  • 30g cashews
  • Juice of half a small lemon
  • 1 clove of garlic
  • 2 tablespoons nutritional yeast
  • 150 ml unsweetened plant milk
  • Salt and pepper to taste

Instructions

  1. Cook your gnocchi according to package instructions.
  2. Blend all the ingredients together until you have a smooth green sauce perfect for drizzling.
  3. That’s it, enjoy!!
