- 2 teaspoon baking powder

- 1 teaspoon ginger
- Sprinkle of cinnamon to taste

- ⅓ cup oil (or 80 ml)
- ¾ cup soy or other vegan milk (or 175 ml)
- ¼ cup orange juice (or 60 ml)
- Grated zest of one orange
- Sprinkle of turmeric (optional, for color)
Instructions
- Combine the dry ingredients.
- In a separate bowl, combine the wet ingredients, then add them to the dry ingredients.
- Mix thoroughly, but be careful not to over-mix.
- Pour into a baking tray and bake at 180°C (or 350°F) for 25-30 mins.
