Ingredients

Scale
  • 2 cups flour (or 240 g)
  • ¾ cup sugar (or 150 g)
  • 2 teaspoon baking powder
  • ½ teaspoon vanilla extract
  • 1 teaspoon ginger
  • Sprinkle of cinnamon to taste
  • Pinch of salt
  • ⅓ cup oil (or 80 ml)
  • ¾ cup soy or other vegan milk (or 175 ml)
  • ¼ cup orange juice (or 60 ml)
  • Grated zest of one orange
  • Sprinkle of turmeric (optional, for color)

Instructions

  1. Combine the dry ingredients.
  2. In a separate bowl, combine the wet ingredients, then add them to the dry ingredients.
  3. Mix thoroughly, but be careful not to over-mix.
  4. Pour into a baking tray and bake at 180°C (or 350°F) for 25-30 mins.
