Description
This is such an incredible recipe for Chocolate Chip Muffins. No need for an electric hand whisk or any special ingredients, this recipe is easy as pie (or muffins?). They’re so speedy to make and you can be tucking into these yummy confections within half an hour. Simply mix the ingredients together, transfer to a baking tin, then put in the oven, and you end up with some seriously decadent, intensely chocolatey muffins.
They’re best served out of the oven when lovely and warm. These tasty sweet treats are the perfect food to brighten up your day and make you feel all warm and cozy inside. Impress your friends or family by sharing them (if that’s possible!) and show them how mouth-watering vegan desserts can be.
Ingredients
Dry ingredients:
1½ cups flour (or 225 g)
1 cup sugar (or 200 g)
2 tbsp cocoa
2 tsp baking powder
½ tsp salt
Wet ingredients:
¼ cup oil (or 55 g)
1 tsp vanilla extract
1 tbsp vinegar
1 cup hot water
For the chocolate chips:
½ cup chocolate chips (or 85 g)
Instructions
- Mix all the dry ingredients in a bowl – the flour, sugar, cocoa, baking powder, and salt.
- Add the wet ingredients – the oil, vanilla extract, vinegar, and hot water, and mix.
- Add the chocolate chips and mix until well combined.
- Transfer the mixture to muffin tins (fill up to three-quarters of each muffin cup) and bake for about 20 minutes.
