15-Minute Quesadillas

Description

Fast, fun, and full of flavor! Spice up your week with these quesadillas – perfect as party food, to make with kids, or as an easy vegan dinner. Vegan quesadillas are simple, satisfying, and full of nourishing plant protein.


Ingredients

  • 1 onion
  • 2 carrots
  • 1 paprika
  • 75g vegan ground meat of your choice (we used soy)
  • 1 teaspoon garlic powder
  • 1 teaspoon powdered vegetable bouillon
  • 1/2 teaspoon turmeric
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 2 tablespoons tomato puree
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh dill
  • 8 small tortillas
  • 200g vegan melty cheese

Instructions

  1. If using dehydrated soy ground meat, pour a cup of boiling water over and leave to soften for a few minutes. You can skip this step if your ground meat is not dried!
  2. Chop onions, carrots and paprika and sauté in a little oil.
  3. Add a little water and your spices, and cook until the veggies are soft.
  4. Then add your vegan meat and soy sauce, and simmer until your kitchen smells irresistible!
  5. Turn off the heat and add fresh dill.
  6. Place a tortilla on a non-stick pan over medium heat, add a quarter of your filling, and then grated vegan cheese.
  7. Put another tortilla on top and press down with a spatula.
  8. After 2-3 minutes, the bottom of the tortilla will be crispy and golden.
  9. Repeat for both sides.
  10. Serve with vegan yogurt or vegan sour cream, or creamy vegan guac!
