It’s so lovely to spend sunny mornings eating one of these indulgent banana muffins with a nice cup of coffee. Who can say no to a muffin packed with gooey, delightful chocolate chips? That would be impossible! If you’re craving something sweet, this recipe really hits the spot.
Did you know that apple sauce is an amazing egg replacer? It works wonders in vegan baking as it binds the ingredients together and creates a fantastic, moist texture. Apple sauce is the only ingredient you might not already have in the cupboard but don’t you worry, you can even make it at home. Just peel, core, and cut a few apples into small cubes, add some water, cover and let it simmer for 20-30 minutes until the apples are soft. Blend, and that’s it!
1 cup multi-purpose flour (or 120 g)
¼ cup apple sauce (or 60 g)
5 medium bananas, mashed
Dark chocolate chips
½ cup brown sugar (or 100 g)
1 tsp baking powder
1 tsp baking soda
- Mix all the ingredients together until you have a very sticky mixture.
- Pour the batter into a muffin tin. Fill each muffin cup up to halfway.
- Bake for 30 minutes in a preheated oven at 180°C.
- After baking, cool to room temperature and serve.
